– Literally the other day, my family got acquainted with “Sweet Snow” from the Vitek company. We got acquainted for three days in a row without a break. Everyone is happy: both grandma, and mom and dad, and my daughter-student. I admit honestly, I don’t like too sweet things. And the airy “Sweet Snow” marshmallows are exactly what I really liked. Moderately sweet, tender, with a creamy taste. And most importantly, participating in the test drive gave me the opportunity to try several recipes with marshmallows at once! I realized my idea of ​​​​making marshmallow cream. I immediately came up with a filling for the buns. I remembered, that somewhere there is a recipe for marshmallow muffins. I really wanted to make cocoa or coffee with mini-marshmallows. Here it is, all at once!

The first experiment involved using plum, chocolate, and marshmallow as bun filling. The marshmallow and chocolate melted during baking, encasing the tart plum in a richly flavorful sweet cream. These buns made our grandmother fall in love. I placed an additional order for this batch.

The second experiment was cocoa with mini marshmallows. I wanted not just cocoa, but cocoa with an interesting taste. That"s why I settled on a recipe for cocoa with orange zest and cardamom. The hot spicy drink was crowned with a lush cap of tiny marshmallows. They melted, adding a delicate ice cream flavor to the drink. I gave the bag with the remaining mini marshmallows to my daughter – she will drink coffee with marshmallows in the dorm. She really liked it! The final experiment involved marshmallow-topped chocolate muffins. I chopped up the big marshmallows, but I think it would be better to use the smaller ones. The dough gained its juiciness from the marshmallows dissolving in it. Additionally, the pieces that landed on top caramelized, adding another flavor.

Buns with plum, chocolate and marshmallow filling

Dough

  • 1 glass of warm milk
  • 1 egg
  • 25g of live yeast or 1 packet of fast-acting SAF-moment
  • 3 tablespoons of sugar
  • 0.5 teaspoon of salt
  • 3-4 cups of flour
  • 6-7 tablespoons of refined vegetable oil

Stuffing

  • plums (I have frozen halves, pitted)
  • large marshmallows
  • dark chocolate (not necessarily dark, of course)

For cooking

  • 1 yolk for greasing buns
  • sugar for sprinkling
  • refined vegetable oil for greasing the pan and buns.

Getting the dough ready

Grind the yeast with a spoonful of sugar in a small bowl. Add a quarter cup of warm milk to dilute. You should see the dough rise after 15 minutes.

Four cups of flour should be sifted into a large bowl; this is where we will start the dough while it rises. Set one cup aside after sorting; yeast dough doesn’t know the precise standards; you must feel and sense it with your hands. It is preferable to add gradually to avoid overly tough dough.

Pour the egg into the flour after shaking it. Stir in two tablespoons sugar, salt, vegetable oil, butter, and remaining milk. Work the dough with your hands. If more flour is needed, add it gradually. Feel it, judge: the dough should be malleable, soft, and the consistency of an earlobe. I use odorless vegetable oil to coat the dough ball and let it rise for an hour. Next, place the dough on a flour-dusted table and shape it into nine balls. Using your hands, knead each one into a smooth cake.

Prepare the filling by breaking up some chocolate, halving some plums, and adding some marshmallows. Arrange the filling in the bottom of each round cake and tie the dough into a knot. The buns should continue to rise for a few more minutes while the oven preheats to 180 C.

The buns’ surface should be coated with egg, blended with milk, and dusted with sugar prior to baking. Use a wooden stick to check when they are done baking—bake them for thirty to forty minutes.
